There isn't really a difference between the two knight units, I've never really noticed the impetuosity of the Templars or the discipline of the Hospitallers especially. I've only had Templar chapter houses twice that I remember - once in Inverness as Scotland after launching a (failed) crusade to capture Vilnius, and once in my Venetian campaign, in Innsbruck after capturing Bologna from the HRE on a crusade. Since you can only have one order or the other, most people get Hospitallers and never see Templars. Crusading is also a must for either one, and you're most likely to go on a crusade to Jerusalem or Antioch before you get one against the excommunicate, or somewhere in the pagan Baltic region. What makes the Hospitallers so much easier to get is a funny restriction about having a province bordering one with 50% or higher Muslim population, i.e.
